Starting Games Using New UI

I struggle every time I use the new Start Game UI. It doesn't seem intuitive to me, and my games end up with randos when I restrict to my group, they always default to real-time (which I never play), I've been added to other people's games when I wanted to start my own with friends, it's complicated...
