Actually I believe the food conversion dialog shows a line on the bottom with the exact amounts of food, animals, rubies... that you will have after conversion.
So you only need to know how much food you need, and whether you can subtract food for the workshop

IHMO, an undo would not make so much sense, the point of the confirm button for me would really be to prevent misclicks. For example, on mobile I need to zoom in first or my fat fingers might push the wrong action or person, which would screw up the entire game
