To clarify, it is "hidden" information because the published rules don't require you to keep your resources open, so the BGA implementation mirrors that. Face down cards means they aren't shown to other players in BGA. Obviously you can see what resources someone is collecting, so it's not hidden in the same sense that Development cards that are drawn blind are hidden.
When someone moves the robber with a 7 roll or uses a knight, they will steal a resource at random AND so that no-one sees it except the one who loses or gains the resource. This will make the contents of player hands hidden information. If you know that player A has wood and ore and player B just stole one card from that players hand, then you do not know which player has that ore. And you shouldn't either.
What displays your hand in the current system is when you offer trades to other players. You can't propose a trade with resources that you don't have (which should actually be possible IMO as this would add more depth to the strategy of trading - to fish other players for information about what they have in their hands).
