Apprentice at start of game?

Is there a rule somewhere I'm missing that players are supposed to start with an apprentice? I can't find it anywhere in the rulebook, but the game is insisting we start with an apprentice before drafting buildings.

It is a rule from an expansion that author want to make mandatory in the base game.

I was also surprised by this when i started my game, and it took quite a while for me to figure out that it was from the Age of Artisans expansion. The additional icons in the Guildhall also come from there.

I really think these game tweaks should be offered a table setting and not be forced on us, just like games like Great Western Trail and Castles of Burgundy allow us to pick which edition of the game we want to play.
