Is there a way to select dice color for color blind individuals?

Not directly. If you are premium, you are able to choose your favourite color for all games.

In some games, there is a special option for color blind people, but not in this game. Since the developer seems quite active, you might sucessfully ask for a change https://boardgamearena.com/bugs?game=1621
