But the game doesn't log the actual dice rolls. Do you know of an easy way to be able to do such an analysis?

To statistically prove there is a problem with the randomness one would have to check many thousands of games. Same
To express "something that seems out of the ordinary for randomness" you need to base that on thousands of games too, I played 9000+ tables of this game and have not found a reason yet to doubt it.
