There are a few ways to start games on here. How are you doing it? As Jellby mentioned, one way to be sure of the settings of a game you enter is to use the Play Now lobby (see the link in my signature) and change the rightmost setting to "Manual" (I think it defaults to "Automatic").

I never use the Play Now interface. I find it confusing- it's unclear to me how I can even start games using it that allow other people (non-friends) to join. (Note: after posting this I did go back to that page and finally realized I could change it from friend mode to manual). Usually I go to main page for the game, check that the setting is turn-based (sometimes it switches to real-time unexpectedly), make sure I'm on arena or play, depending on the game, and then start a game using my preferred settings, with 1 move a day. When I do play with friends I use the same interface but add my friends through it.
I rarely join other people's games unless I see one that meets my preferred settings (which is rare, usually they are more frequent than I like). I usually have about 50 games going at once, about half of which are arena. Most of them seem to end up with the correct settings, but every now and again I end up with a game that doesn't match the settings I've configured- either in terms of the frequency of turns, or a few times I've ended up with more players than I expected. I don't turn on the flexibility option so I'm confused as to why this happens, and if it's a bug or if I'm missing something.

If you use Play Now you don't have to worry about the flexible slider and all that nonsense. If *you* start the table, you can make the setting *exactly* what you want and they won't change in unpredictable ways.
The caveat, of course, is you say you play a lot of arena, so you only have limited control over those options (only the game speed preference, I think) because most are static for the entire season.
