Thank you so much nik592 and JohnnyCyclops; under the cog on the "old lobby" there is an an advanced options prompt and on that window I could set what hours I am now available to play (among other things I didn't even know were possible)! This is exactly what I was looking for. I'll have to get used to joining games from here.

I'm one of the crusty old players who nearly always joins from here. Maybe the granularity of control has been replicated in the new Games tab and single-game lobby, but it still seems easier to do from Play Now.
