How do I clear an Icon that I accidentally clicked on, or more likely, one that I want to remove because people are diving down the wrong "rabbit hole"??

At the right side of the game you can see the icons you have chosen. When you move your cursor to one of them, a waste basket appears. When you click on it, this icon will be removed.
