You can't. It's calculated automatically. Certainly based on the amount of participants, and maybe other factors too, not sure about that.

Hello,
Is there a way to organise a "all round" (toutes rondes en Français) with more than 15 players ? Is it a core limitation, or just a limitation that can be unlock with experience in tournements organisation ?

In English the format is called "round-robin" (apparently derived from the French word
ruban). BGA has no way to set a round-robin with more than 15 players, as far as I know.

The only way is to have a 'group stage' tournament, where in the first stage the players will be split-up into groups of 15-at-most, and in the second stage there will only be 15-at-most that get through. The most players that can participate is 225 (15 groups of 15; 1 player from each group goes through; final group of 15).
