Would Crokinole work ... as a digital dexterity shooter?
Backgammon: There are a bunch of variants that exist that change up the objectives, direction of play, and circuits around the board. Race, chase, zombies, etc etc.
Colt Express needs the Couriers and Armoured Train expansion added.
Darts - another digital dexterity game that could perhaps be adapted.
