why are yams tournaments listed as Yahtzee?

Because it is the same game.
On that game, there is 2 different rules : Yahtzee and Yam's.

So, if you want to join a Yam's tournament, you watch the "Yahtzee" tournaments and you look at the rules.

shouldn't it says yams...some of us don't like yams

It's the responsibility of the creator of a tournament to include hints to set options into the tournament title.

If all yams tournament creators include yams there, it would be easy to recognise this option.
