I would like to add Cantonese as one of my spoken languages put it does not appear in the list in preferences.

Is the list limited to the languages which can be translated by whichever system bga utilises?

I see two Chinese options at the very bottom of the list. Are either of those Cantonese?

No, cantonese is not on the list. Both of the options at the bottom are mandarin

中文 (漢) = Mandarin (using traditional character set)
中文 (汉) = Mandarin (using simplified character set)

汉 is the simplified form of 漢 and is short for 漢語 meaning mandarin language.

Cantonese language is 粵語, so in the same system it would appear as:
中文 (粵)
or simply 粵語

Cantonese is not commonly written with simplified characters, so rarely has a distinction between traditional and simplified in translation services.
For reference the simplified form of 粵 is 粤, slightly different but almost identical.

Background info:
Simplified Mandarin = common in parts of Mainland China
Traditional Mandarin = used in Taiwan
Traditional Cantonese = used in Hong Kong, Macau and overseas Chinese communities
Simplified Cantonese = common in southern mainland China
