When it states for example 97 players available to play, does it mean that 97 players have the game you are creating a table for in their favorites list, but none of them may be on-line, or what does it mean?

I am fairly certain it means that there are 97 people who have it in their favorites list who are signed in and who are not playing at another real-time table at that instant.
The bit about their favorites list may actually be "accounts that they have played the game at least once." And again, I'm not absolutely certain about any of this.

It means that all of those players have it in its favorite list, they don't have to play it to add it in. Yes they are online, but currently absent from the game that you want to play. You can invite someone to play from those people online.
