How to turn around the double symbol cards (p.e. food + play)? I only can choose the one symbol side...

By default created games are single symbol, you need to choose option before start to be able to pick double ones.
I don't know why it is not vice versa.

Yes it should default to double symbol. The game is incredibly random and hard with single symbol cards.

Playing with single symbol cards is easier for begginers to learn the game. That is reason for being default. Other players can switch to double symbols.

It is not easier to PLAY with single symbol cards, however--the end result is that beginners will find the game frustrating.
