I've chosen purple as my preferred colour, but I never get to be purple, it always defaults to my second preference which is yellow.
I don't suppose anyone can tell me why I can't ever be purple in a game???

There is your set of preference, where purple is first and yellow second.
Then, each game has a set of colours available in the game, which are exactly the same as the one in the physical copy of the game, so if there is no purple in the physical copy, no purple for you, and you get yellow instead (which is often available in the physical copy).
[If purple was available, no other player was given it, and you were not given it either, it might be worth a bug report for this specific game]

This is correct. My 1st choice color is green, but in games with no green, such as Expedition: Northwest Passage, I get another color, not because someone else got my color, but because it isn't in the game at all. In a game that has no pieces/meeples/pawns etc. with a particular color assigned to players, like 6 Nimmt (or most card games using a standard deck for that matter), you will get your preference assuming it doesn't conflict with someone else's preference.

Ah okay, in that case it's not often you get purple in a board game (maybe it's a harder colour to print!), so I may not be in luck here then.

Another thing that happens is that the algorithm tries to give as many players as possible one of the colours on their preference list, rather than prioritising giving more people their first choice.
So even if the game has purple pieces, you might not get them if nobody else wants to play yellow.
