Choosing cards at the beginning

In the choosing cards mode (e.g. 10->7), why is choosing divided into 7 rounds and I have to wait for other players? I would prefer to choose all 7 cards at once.
That depends on the setting of the table, below is the whole list of possible draft modes.
The one you are referring to is 'Keep 7 cards out of 10 dealt'.
