Seed mode? Why no cards?

What does Seed mode mean in Agricola's preferences? Also why do some games not have cards? I was wondering if I could set that in preferences.
In seed mode, you can input another game's seed to replicate its initial setup. A game's seed will be displayed at the end of the game.
Beginner mode does not use cards in hand.
