Is there a way to see how many resource cards are left?

There is but it’s a setup parameter when you create a game. You need to choose « no » for the realistic game
If you automatically join games, you can update your game preference to « no » as well.

If you play with the realistic mode, the progression % gives you a broad estimate of how many of the cards have been depleted
