According to the rules:

Worker tiles: These may be used at any time (a tile, once used, is returned to
the general supply) to adjust a die’s result up or down by 1. Changing a die’s
result from 1 to 6 or from 6 to 1 is also permitted and also costs one worker
tile. Players may use multiple tiles to change a die’s result multiple times.

How do I do that in this interface? I don't see anything about it on the wiki page. I can click on a die and then click on my workers pile, but that just adds workers.

You don't need to explicitly say you're using workers. Just take an action that needs them and any workers needed for it will be automatically used.

Also, there is an option to show workers needed that can be toggled. So it shows how many workers needed for an action you want to carry out.

After the actions description:

Workers are automatically used if needed. They appear afterwards in the log message, but if you want to be sure before your action of how many workers are needed, you can enable the Display workers needed user preference.

It doesn't answer my question, how do I use the workers to change to die roll like the rules say I can? Where do I click? What am I not seeing in the UI?

It does answer your question. There is nothing specific in the UI for this, but you will be given all options that are legal, taking into account your workers.

For example if you click on a "3" die and want to take a tile from the main display, and you have 1 worker, all tiles on the "2" and "4" areas, as well as "3", will be highlighted and you will be able to click to take them. If you do take one from "2" or "4" in this situation, you will see your worker count go down by 1. And similarly for other actions.

Thank you! On my small screen it is not possible to see that happening all at the same time.
