It says the game ends after 5 incomes, where does it say how many incomes players have taken?

In your (their) tapestry board. Each one of the 4 positions with a "card" (counting "maker of fire" as a card), is an income the player has taken. (Except at the very beginning, before the first turn, but the first turn will be income and then it will match.)
