Oui, les decks joueurs ont leur pioche tournée face visible, donc les cartes sont visibles quand on pioche.

Dans un jeu physique, on verrait même la 6e carte, au sommet de la pile.

This is not correct; allow me to quote from the rulebook, p. 2, under Setup:

(4) Shuffle the common cards and make a central deck, facedown.

We are not speaking about central deck but about both side decks which are, indeed, faceup.
