how to set up game with no timer

How do i set up a game with no lime limit?
Im teaching other people to play this and we both want to chat through and learn. However, the timer goes into negative numbers which when im playing other (non family members) it looks like my rating is awful because ive gone into negative time on virtually every game of this i have played. I play a normal speed when not teaching someone but feel like I'm penalised by the timer for teaching others.

When you create a manual table you need to restrict access to your friends only and then you'll be able to set game speed to no time limit. My group does this all the time when learning new games.

"Restrict table access" is in small writing top right of where the players sit.
Restrict to group: my friends
Game Speed is to the left of where the players sit and no time limit is right down the bottom of that drop down box.
