Can we play on multiple tables simultaneously using premium? E.g Hearts

You can‘t do so for real time tables (why would you), but can do so on turn based tables. Neither is affected by premium.

I'm trying to rank up quickly and i manage playing multiple games at once.

Not exactly sure, but I think standard accounts are limited with Turnbased games in the beginning. A new account can only play 1 Turnbased table, after this table they can play 2 tables, after that they can play 3 tables, etc...

This limitation is dropped with premium.

Reasoning is that someone who paid won't just abandon the account and leave those tables deserted.

You can be waiting for more games at once if you're premium. There's a limit of 3 tables for those without.
Once a game starts (turn based) you're free to join another of the same game though
