You definitely could not. Catan was released as a 3-5 player game. There are variants that are designed to convert it into a 2 player game but given BGA policy there would need to be some sort of discussion with the publishers to get one of those implemented.

1v1 is stupid. Not official. If you want to get one unofficial thing, then other people want something else etc etc. Eventually it will not even be Catan anymore.
