What difference does the "Sushi Go!" option make?

If the "Sushi Go!" option is enabled for a Sushi Go Party! game, is the gameplay any different from a game of Sushi Go! (as the game is still available) - or does it uses rule changes from Sushi Go Party! e.g. a smaller deck that's reshuffled between rounds; a pre-set number of puddings per round; different scoring of puddings/maki/soy sauce...
