How can you see how many places you rise or fall when you play against a higher or lower ranked player and you win or lose. Someone who knows?

I assume you are talking about the situation that you are in Elite already and you see your arena points.

Depending on the Arena points of your opponent you win more (stronger opponent) or less (weaker opponent) points. You lose more (weaker opp.) or less (stronger opponent) points, if you lose a game.

How many places you win/lose depends... If you win 5 points but next-higher player is 10 points ahead you overtake nobody and stay where you are. If you win the same 5 points and there are 50 people max. 4 points ahead of you then you overtake them all and you gain 50 spots...
