A way to play solo (controlling all players) would be nice.

You can use the BGA hotseat mode to add fake players to the table and controls them all in turn

Is it possible to switch between hotseat players? for example I need to transfer a passenger to DEN, but I want the 2nd play to move there before the first player leaves/ends their turn. The game seems to only allow one player to complete their turn before the next player (i.e. this is not how it's played in real time or real life)

Start the game in turn-based mode and then you get a "snooze until next move" button during the flight phase. Clicking it will temporarily deactivate the current player and should move to the next player.
