Is it possible to choose my colour at the start of a game when i want to host a game? Because i'm used to ALWAYS play with blue irl and i get green all the time online and its a little bit confusing

You can specify color preferences in the settings, but it doesn't guarantee you will get it (someone else may also have a preference for that color) and for most games (including Carcassonne) you cannot directly choose your color.
