I want to be able to set more than one other player and adjust other settings, etc. How do I turn off the arena play?

Answering the question in the subject line is easiest, so I'll start there: given that Arena is entirely opt-in, I'm going to say yes, you can opt out. :-)

Unfortunately, given that BGA has now instituted multiple ways of getting into a game, some of which are more confusing than others, I would need to know which method you're using before I can answer this one. How are you going about getting yourself into games?

Just change the game mode from Arena to Simple mode, and then automatic opponents.

If you are starting games from the page that only shows Wingspan an no other games, change the left setting from "Arena" to "Play." Alternatively, you can start a game by clicking "Play Now" at the top of the page (or the top option of the upper left hamburger menu if you're on a mobile device). In the Play Now lobby, change the left setting from Arena to "Simple Game."
