The game could go a little faster, if any purchase available would be paid by non-gold jewels (or minimum possible amount of gold) by default. Of course, the player should still be able to change it, but there wouldn't be necessary extra clicks if they didn't want to.

There are situations where a player wants to use gold even if not necessary (like, desire to return the gold to bank to be able to make a reservation next turn), but it feels like those situations are quite few.

The default should be to not pay in gold if you can. As long as there's the option to manual override, it should be fine.

Totally agree.
When you click on a card to buy it it could select all the non-gold tokens and ask you to confirm. If you wanted to use the gold, you could click the tokens you wanted to not use to un-select them and click the gold. It would save quite a few clicks each time and be much faster
