The game is interesting but isn't playing with uninverted (normal) dice the same thing? The scores are symmetrical and it wouldn't blow your mind so much

The scores are not "symmetrical", at least not when it comes to the probabilities involved.
For instance, the chance of rolling 1 (or 2) is 120 times greater than the chance of rolling 19 (or 20).

Indeed but scoring "20" brings you a better advantage than scoring "1".
Scoring low numbers is easier (according to the probability) but IS interesting only if you get the 50 points bonus !
