Round robin & match dates

We are a board game club (IRL) and want to host some turn-by-turn "duel" games tournaments on BGA. We want to play against every other interested player. Games are like Codex, Ancient Knowledge, and Ark Nova ; so short ones and longer ones, and we can assume 10 players.
I tried to set up round robin tournaments, but I'm facing an issue with the different match dates. If I do not change anything, all matches will start at the same time. Which is a little bit overwhelm... Sadly, if I try to set up match dates manually, I'm only allowed to put one match every time the previous one is supposed to end. Let's say I set up 12 days for a max Ark Nova match, I'll be able to start the five first matches at the same time (with no specific dates for them). But then I'll only be able to set up one new match every 12 days. And the tournament will last for a very long time... Why is there such a time limit? It should be better to start several new matches at the same time, as it's possible to start the first ones at the tournament opening.
Any other idea on how I could proceed? Going for a Swiss tournament with x-1 games (x being the number of players) doesn't change anything regarding the match dating features.
