It’s only available in turn-based games, not real-time.

Ahh I have a separate notepad that I use on the side

I actually had the exact same confusion when I tried to use the BGA notepad in one of my realtime videos haha

I imagine notes track how many of each tile type comes out of the bag each round to then know how many tiles are left in the bag and to play some percentage probabilities.

I was just about to write a post asking whether the "box lid" is visible during the games here on BGA.
When playing the physical game, one can just look in the box lid to see how many of each tile have been discarded and therefore know how many more will come out of the bag in round 5 of a 2-player game.
I have made several misplays because I did not see this information and I felt too rushed to keep track of it myself.
The games I have played seem to go at a laser-fast pace, with my opponents using 3 minutes think time for the entire game. I had one player quit midway, with a polite message saying, "apologies, but I cannot play at this pace".
This is a difficult game to play well. Making moves without spending time thinking is a god way to take a minus 14 for penalty tiles. For me, this apparently expected rushes style of play is exacerbated by the lack of a visible display of the discarded tiles.
