I've been playing some solo games recently, and would like to be able to continue playing after meeting the win condition (negative emissions plus survive crises that round). In particular, I'd like to try getting temperatures back down to the bottom of the thermometer.

You're welcome to file an official suggestion using the link at the top of this page. However, it's rare for variations to be implemented unless they are publisher-approved.

Or you can just increase the difficulty and postpone the game end by intentionally not completing challenge cards.

Not just according to the FAQ, also according to the page itself. If you visit it, it says at the top: "Bugs & suggestions"

Introduce group & individual challenges - they’re random but several of them require also having some added requirement for winning (100% clean energy & no dirty energy, no emissions, etc.
