I am not sure what is the correct interpretation of the 2nd option of the Horticulturist card, as there is a difference between the English and the German text. In the English version, the 2nd option says that you can gain 3 VP by uprooting and discarding 2 vine cards. Does this mean the vine cards you discard must be the same cards which you uprooted? The implementation here on BGA answers this question in the negative - if you have other vine cards in hand, the implementation allows you to discard 2 of these other cards (or 1 of them and 1 just uprooted card), keep the just uprooted vine cards (or 1 of them) in hand, and still get the 3 VP.
The German version of this card, by contrast, is very clear. It states "entwurzle 2 [Rebenkarten] und wirf sie ab, um 3 [Siegpunkte] zu erhalten", in English "uproot 2 [vine cards] and discard them, to gain 3 [victory points]".
So, the German version of the card is clearly at odds with the implementation on BGA. Regarding the English version, there is room for discussion.

I'm fairly certain the discarded cards must be the 2 cards that were uprooted.
