Assuming you win a game of Backgammon as Gammon or Backgammon, how does this victory affect your personal rating?
Does it count as 2 or 3 games won?

If you win a Backgammon match it will always have the same effect on your ELO. It does not matter if you play long matches for many points (e.g. till 9 points) or just matches for one point. Elo is also not influenced by the margin of win - it does not matter if you win 9:0 or 9:8.
Presumably you are talking about one-point matches where there is no cube. In tournament play you will always be scored a 1:0 win, independent if you win a gammon or backgammon. Here on BGA you will have a 2:0 win or 3:0 win, but this only has an effect on the statistic page, not on ELO.
To make my point more clear: If in a Real live tournament in a 9-point match you are leading 8:2 and you win a doubled gammon then the final score will be written down as 9:2 (the winner will *always* be awarded 9 points no matter what). But in Backgammon tournaments a 9:0 win and a 9:8 win count the same, so it does not really matter how you score the win. It is just the common way of notation that you cap at 9.
Here on BGA the final score will be 12:2 if you win a doubled gammon after leading 8:2. And you get ELO as if you had won a one-point single match with 1:0.
