Is I possible to give us the option to choose NO VARIANTS as an option?
The only way to avoid problem games is to play through and lose. Better than being punished, but not very satisfying

For any option that a person can set when creating a table, there is an option to filter that out. For example, for Ticket to Ride the options to only play the base game USA map with no variants would look like this:

Here's how you do it:
If you manually create a game (i.e., starting a game from the Play Now page [see my signature for the link] with the rightmost option set to "Manual"), you can determine the settings yourself.
Alternatively, under Automatic matching you the filter options are found by clicking on the gear icon next to the game thumbnail image.
But the single game lobby also lets you choose those options, so is the issue that you're clicking the little slider to the right that says you are flexible on that option? If you do that, then it means you are open to playing with whatever the alternative to that setting is. All those must remain slid to the left if you don't ever want the alternative. For example, in
this screenshot I have the USA map selected, but the flexibility slider is to the right so it means I can still be put on the Switzerland map.

Thank you for posting, really appreciate it. Because of mental health issues it's sadly not a solution for me. I'll explain for the benefit of everyone. People might get an insight into what this is like. I totally respect what you are saying, and the time it must have taken.
Firstly, I am someone who takes this very seriously, no doubt like a lot of players here. When the variant kicks in I lose my calm and get very agitated. Obviously this is not sensible, but there's nothing sensible about mental health, it is what it is. Seven years now.
The prospect of having to go through the games I want to play is far beyond me. I get muddled doing the most simple things at times, and the longer it takes the more frustrating it is. It's quite common for me to get very stressed and anxious managing my bank account, I get there in the end but it can be tough.
These things sadly mean that I have to leave ths wonderful site, go back to 550 piece online jigsaws.
One footnote. I came back to this after a longish time. I think it's nowhere near what it used to be. Easy to play, easy to navigate (now it's ridiculous), I don't think my health has deteriorated hugely, seriously hope so!

Bga is the greatest thing for mental health. I call it anti dementia for a good reason. Keep thinking. Keep reading rule books. Keep learning.. and the brain can and will actually improve. I am proof. I am 60. And over last 2 years of playing.. my brain is 1000 percent better

You're very welcome, and thanks for acknowledging the gift of time. It's weird that it frequently goes unappreciated.
I really hope you can get to a place where you can continue playing.

Sorry to say this, but I take this as a perfect example of the point I am making. Not wishing to be rude or offensive, but I don't think you could have read my post properly.i am older than you - not really relevant of course. I used to be a Cobol programmer. Means nothing. I wish you well and congratulate you on your success. No two individuals have the same lived experiences.
