Why is it that the players who are left after others Abandoned games lose their cities when the pirates land, even if they have Knights?

Once a player quits (or is expelled), the game is over. Some games allow the remaining players to keep "pretending" the game is still on and make moves, but the end result will be unaffected, the game was already finished when the player quit. Many other games are left in a broken state, with moves that cannot be completed, or deadlocks, or absurd "default" actions... that seems to be the case here.

It could also be the case that they had no cities left. If a player has no cities to lose (only settlements and/or metropolises) he cannot be the weakest defender. Even if such a player has 0 knights and you have 1, you are weaker than them in case the barbarians win.

Not the case here. I can have 12 knights and be the only city and it will destroy my city.

Then Jellby has given the correct answer already.

Since you did not supply a game number I just wanted to add another theory - but I was well aware that Jellby's explanation could cover the case.

Once others quit the game, you (and whoever is left actively playing) need to provide enough knights to cover all the cities on the table. The players who quit will never lose cities.
