Would you use an idol to defeat a guardian?

This seems to come up pretty often for me in the early game: On the first time I go to a new level 1 site, and get my first idol of the game, I get a guardian that I can _almost_ defeat with the cards and items I already have. If I use the idol, I can get the one missing item I need, and defeat the guardian.
What's better: Keep the idol for later (such as to help me advance on the track, get a great assistant early maybe) and take the fear card, or use the idol now and beat the guardian?
Would your choice be affected by the guardian's benefit (a travel icon, draw a card, or exil a card)?

Yes,probably. You wind up with five points and a boon,as opposed to a fear card and an assistant. But my scores aren't very good - so perhaps I'm wrong.

In most cases yes. Gaining fear card is huge drawback in early game. Although there are some exceptions for that rule. One is stealing nice assistant from your opponent or opportunity to steal one-time bonus by advancing glass/notebook - I would say it is better option in ~30% of cases. 2nd exception is dependant on guardian. Guardians: 4coin, 3 tablet and 2compases + arrow are barely worth overcoming even without wasting idol for them.

Why are those guardians not worth defeating?

You need your resources to stay in balance:
2coint + 2compases + 2tiles >> 6coins or 6compases or 6 tiles (usually)
Those guardians that I mentioned (mostly 4coint, 3tablet) require single type of resource and if you want to defeat them usually you wont be able to do anything more current round. This slow down may seem like minor thing for entry player but in higher tiers getting/advancing your assistant this round vs next one is really important.
Paying 4 coins is especially devastating in an early game where it stops you from buying valuable item.
Paying 3 tiles sux the whole game.
2compasses + arrow a little more painful in later game where you want to be ready to explore at a 1st move next round because player rush to explore sires with assistant refresh bonus or anything else than remove card bonus. Or some new fancy artifact appears next round and you wanna be ready to acquire it.
Obviously having pigeon, dog or lantern will most likely fix balance issues with 3tiles guardians. Steam boat / Automobile / compass woman will fix issue with 2compasses + arrow. And 2coin card, coin assistant or trader scales will fix... nope it is still probably not worth it - depending on round and cards available. It is always better idea to get airplane (if you know that u will be able to draw it at least once) than to beat a guardian.
Note that it comes from my limited experience
