I've played many many games, but today was the first time having more whiskey production than the board has spots for. Typically games would say something like "score 3 points each time you would extend past the last spot" but there is nothing like that in the rulebook so am I to assume that the max you can score for whisky production is 30? Feels strange when there are no other scoring limitations and it is one path of many to victory.

You are correct, the max your destilliery can gain you is 30 p. The online iteration was developed according to the official rules by designer and studio.
