Card visibility

Why is it that players can see other players cards and that if you wait long enough, you can see what they have played and counter it.?
What can be done? How do you as a player get around that part?

Definitely shouldn't be doing that, report it as a bug if you have examples of it happening.
Not something I've seen personally, even with a "real-time" turn that took an hour to play (and a turn-based that's over a week old)

All of my games I've been able to see the other players cards.

Just to be clear because I think I phrased my reply poorly.
Seeing the cards in the opponent's hand/discard/banish is intentional and totally fine. Seeing the "face-down" card the opponent has in play before you choose your play would be a bug. Whatever card they played should show as in the opponent's hand until it's revealed when card resolutions start happening.
Some might happen later in the turn after card reveals (Radiant Black ult, Griffin passive) but they're still after your card was played.
With the characters on BGA, seeing their hand offers no gameplay advantage since it can deduced with perfect accuracy from what's face-up in discard/banished/stored. It just makes it more convenient and new player friendly.
But definitely submit a bug to the devs if you're seeing the opponent's played card before you have to choose yours (screenshots/video would be super helpful to them I'm sure).

It's a bit like Battlecon that way...you always know exactly what your opponent CAN do. You have to then figure out what they're GOING TO do.
Or, like me, guess wrong repeatedly and lose.

Thanks I'm new to the game so I did think seeing the other players hands was by design so you could make an educated decision on what you should play. Then I watched a handful of IRL games on Youtube and everyone was keeping their hand secret, so that's when I started believing this to be a bug. The images on this games very own BGA page show the guy and girl hiding their hands from each other.
I do think there are so few cards and with being able to see your opponents discard pile, it wouldn't take many games for that information to be remembered anyways

Totally understandable.
People do keep their hands hidden IRL but will usually show you if asked (and they haven't played already of course). I actually made little reference cards I keep with each character so that people can see all the opponent's abilities without needing to see hands.
The only significant change on card visibility is that in IRL Legacy, the passed cards are secret until played
