Hello, does anyone know how to stop splendor from resetting to arena mode every time i go to start a new game? Thanks.

Top-left of the "play now" screen, chance "Arena" to "simple game".

There’s a surprising number of ways to “start a new game” (eg the old “Play Now” lobby, the newer launch screen found on the game’s page, or the “Play Again” button when you finish a game, etc), so it would be very helpful to know exactly what you are doing in order answer your question.
