Because often time, you can math it out a bit. 7 cost cards and 7-3 cards can often be defended or slowed down if you know the card.

The percentage of elo for a leaver is stupid. I had 10. I had 5 reserved and was about to win... then the person rage quit before my turn and I got only 53%... Really? 10 points and about to buy 5 and I get 53?

Splendor and Faraway are similar games in different forms. The issue with your play is that it is very aimless. With a board as efficient as that, you should be essentially planning backwards. If you are min-maxing, 4 points for 7 coins are the most efficient cards available while tier 1 cards are very inefficient. Reserve the best cards and collect only to buy the most efficient cards. card tracking is a skill in just about every card game. The only people that don't like it are the ones that want to remove the skill out of a game. It's the same reason why casinos kick out people who track cards... how else is the house suppose to take your money?
