They're shown. Look at the yellow lines. There you can see your bet just besides the track.

Is it against the rules to ask in the table chat if someone is interested in a trade agreement before playing the card?

It has to be that way. In the real board game you remove the dice from the board and only leave a marker for your end destination when doing a flat out. Then you roll them all and place them on the board to reach the destination. That's why it works that way here as well.
