To choose an animal enclosure, click on the one you want in the display at the top of the screen. The available choices should be outlined in a different color.

Bärenpark has an issue where the supply board of tiles sometimes disappears. It happens when the zoom level for the supply board is too high for your screen size. If you can't see the supply board at all just the player boards, adjust the slider for the zoom level (top right of the playing area) until the supply board reappears.

I left a detailed comment about this issue on the bug report some weeks ago but I don't think the Bärenpark developer saw it as it still happens to me in my turn based games quite a bit. Sometimes I accidentally touch the zoom slider when trying to scroll my phone screen but other times the table just loads up like that (ie. The zoom level up too high and the supply board missing).
