Why so few German Whist fans?

I can think of 2 reasons:
1. Most BGA users play turn-based and trick-taking games like this one take forever if they're not played real-time.
2. There's a million trick-taking games on BGA so the people who like those games are stretched thin across all of them.

A possible solution is to set up a group (if there isn't one already) for trick-taking games and coordinate real-time play of one or a few games at a time. E.g. organising a tournament or something such, at a time and on a day that has been agreed upon in advance so a sufficient number of players can participate.
