Is it possible to filter out all but average players? I am frustrated by the fact that when I create a game, strong and expert players join. As an apprentice, I have little change against this level of player. I would like to play with other apprentices or average players instead.

Yes.

When you create a table, there's an icon with a door to the right of the number of players. If you click on that, it brings up restrictions that you can set on who can join your table, including skill level.

Like the other person said yes you can. However with Wingspan I think it would be more beneficial to have higher level players to learn from. In Wingspan everyone will always have the same number of turns so you'll still get the same opportunity per game to explore strategies.
