I find a lot of people will say "gg" after pretty much any game whether they thought it was good or not. "Good Game" seems to indicate a little more enjoyment than "gg". For games that people thought were really good, they usually say "Very Good Game" or "Great Game". And those seem to come most often for games that were very close, the player who seemed to be in the lead changed several times, and then my opponent eventually won.

A lot of people also say "good morning" or "nice to meet you" even when... let's say when they don't agree with themselves

It's just a polite thing to say at the end of a game. Usually when I lose a real-time game, I type "gg" as a courtesy, whether I thought the game was particularly good or not. When I win, I'll respond to a "gg" but won't initiate it (to me saying "gg" first when you win comes off as aggressive). Different people have different habits though, some people don't want to engage with the chat at all and will stay silent no matter what, while others will type "gg" at the end of the game no matter what.

The trouble is,you might not have the choice to hang around.You make your last move in a game,then you might go to bed,and not be there to respond to what your opponent says.

Saying "gg" before the final score is even revealed is - to me - a super-cocky way to behave.
As such, I've pretty much stopped saying anything to anyone. I'll make an exception if the person says something more than "gg" - like "Oh, I thought I had you there" or "Wow, that wasn't even close."
If the person is bragging, I simply won't play with them again.
But, yeah, nothing annoys me more than seeing final scoring being added and already there's the victor spewing out a token "gg" -- which (IMO) is more for him/her than me

Why? I don't use 'gg' but in games where the result is calculable I give 'thanks for the game' or 'well played' at the point where victory is no longer possible for one side. I get how it would be weird to say that when the opponent can still win, but your remark could come across as being annoyed because you aren't good enough to see the result, which is also slightly weird.

I don't have an issue with the pre-score gg when the game's over and points are just being totaled or posted or something, but i agree it can feel like bragging when it's used to announce the unknown (or not entirely sure) win. I see it often in Catan, where the player will say gg right before making the winning move or revealing the +1 development cards. It is what it is, nothing worth getting upset over, but i get how it comes across as "super-cocky" as Lemur put it. Like they're determined to announce their win before BGA can.
On the other hand, it can be quite amusing when they send the gg.. and then realize they're out of settlements or for whatever reason can't make that winning move they planned... karma teaching some humility i guess

Imagine you were at an actual game table.
You're counting up final scores; and the person who wins (and is going to win) just stands up as the scores are being tabulated and says "Good game" and then walks away.
I'd be annoyed by that. Is it "wrong" - not necessarily. Is it someone I won't want to play with again? Absolutely.

If you want your analogy, then you're saying it's best to just stand-up and walk out without even saying anything. That's even weirder. And that's what happens most of the games that end here on BGA.
Take it in the spirit it is meant, not twisted up into bad loser hokum.
