Est-il possible de restreindre l'accès des parties à des joueurs appartenant à un fuseau horaire proche du notre ? Là je joue une partie de Catan avec un américain et un japonais cela risque d'être très long du fait des échanges

No. And it would be useless, because people have different schedules, and their timezone doesn't say anything about when or how often they are able/willing to play their turn

You can set the game to a fast speed (8 turns per day or more), and then choose a 12-hour period during which the clocks run (the times are displayed in the local timezone for each player). It's then the other players' responsibility to not join tables with schedules they can't meet, but I'm afraid you'll still have players joining who don't know/care about the settings and will time out soon, but you can expel them.
